Shawn Monroe is the executive chef at Mader’s restaurant in Milwaukee. Partnering with Victor Mader in 2002, the
innovative former New York Executive Chef Monroe has offered global cuisine and implemented a banquet and catering
service that specializes in social and corporate events of any size.
Chef Monroe began his career in the culinary industry in 1983 and settled in New York. In 1994, he worked as a sous
chef at Pierce’s 1894 Restaurant, a four-star/four diamond and Dirona awarded restaurant. Here, he had the pleasure
of working with Chef George Shimert who was trained by the world-renowned Chef Jeremiah Towers. Chef Monroe
excelled at his position and went on to become the executive chef. Chef Monroe then headed to Cornell University in
1997, where he turned his talents to teaching as chef de cuisine for the School of Hotel Management. Here he was able
to work with celebrity chefs, such as Emeril Lagasse, Wolfgang Puck and Daniel Boulud. Monroe has proudly showcased
his culinary expertise for dignitaries like Ferdinand Metz, the president of the Culinary Institute of America; George Lang,
chef and owner of Café des Artistes and author of “Nobody knows the Truffles I’ve Seen”; former first lady, Hillary
Clinton; and Lech Walesa, former president of Poland and other international leaders.
In May of 2005, Chef Monroe was awarded the contract as the exclusive food provider for Midwest Airlines “Buy On
Board” Best Care Cuisine. As a corporate partner with Midwest Airlines, Chef Monroe oversees kitchens in Milwaukee and
Kansas City which produce an average of 3000 meals every day. Insisting on combining the freshest ingredients and
innovative cooking techniques, Chef Monroe has received top honors from prestigious award societies such as Conde
Nast and Zagat. In order to keep things interesting for frequent flyers, Chef Monroe and his teams of three and four
star chefs change the entire seven option menu bimonthly. Finally, Chef Monroe has catered for such high profile
companies such as the Milwaukee Bucks, the Milwaukee Brewers, the Kansas City Royals, Kansas University, the
Milwaukee Motor Speedway and Miller Brewing.
In November of 2005, for the grand opening of their Kansas City facility, Midwest Airlines sponsored a tasting of their
new “Best Care Cuisine.” The event, which took place at the Hotel Philips, hosted the Kansas City Symphony’s Musical
Director, Michael Stern, and various other Kansas City dignitaries.
